To make vinegar “Balsamico” you need knowledge, competence and an experienced Master Vinegar Maker, but what is required most is a passion and love for this healthy and sweet elixir.
Our Balsamic Vinegar Master, Dodi Ricordano – Dano to his friends – obtained his expertise from the many years he spent taking care of his own collection of casks, which he inherited from his grandmother Carmelina Ligabue.
After working for many years as a dairyman, he committed himself to increasing his knowledge of anything concerned with the manufacture of balsamic vinegar. He learned how to cook and heat the must, then how to adjust the acidity and check the ageing process of the vinegar and finally, how to taste it.
In 2000 Dano founded the Acetaia Dodi (the Dodi Vinegar Factory), expanding its sales into thirty countries around the world. In 2004 he won the Silver Spoon Award, given to the best taster of Balsamic Vinegar in the region. His life and his work now revolve continually around balsamic vinegar. In recent years Dodi Ricordano has travelled to Russia, Argentina and China to share his expertise at balsamic vinegar conferences.
In 2012 he was invited to the Shanxi International Vinegar Fair in Taiyuan City, China, where conference-goers were entranced by his enthusiasm and passion when discussing balsamic vinegar. And they were even more impressed when they tasted the sweetness and flavour of that wonderfully flavoursome product.
Recently, he has started a new venture concerned with not only the production of balsamic vinegar but also the promotion of Italian excellence in the culinary fields of food and wine.
